Our sweet quest continued, drawing us further south to the bustling metropolis of Chennai, a city renowned for its rich cultural heritage and, as we were about to discover, its hidden culinary gems.
After the wholesome simplicity of Coimbatore’s nuts laddu and the vibrant artistry of Kozhikode’s halwa, we wondered what other regional delights awaited us.
The Discovery of Dum Ka Roat Halwa
Our search led us away from the typical tourist trails, into the older, more traditional quarters of Chennai. Nestled amongst age-old buildings and narrow lanes, we found what we were looking for: the legendary Dum Ka Roat Halwa.
This wasn’t just a sweet—it was a revelation. A dish whispered to have royal origins, prepared with painstaking care over several hours using the traditional “dum” method of slow cooking in a sealed pot.
The aroma that wafted from the shop was unlike anything we had encountered. It was a complex symphony of saffron, ghee, and roasted semolina, promising richness we could only imagine.
We watched, captivated, as the halwa was gently spooned out—a glistening, golden-brown mass adorned with slivered almonds and pistachios. It was clear that this sweet had been lovingly baked, its surface a testament to the slow, meticulous process.

Flavour: Deep and nutty, with subtle hints of cardamom and rose water.

This wasn’t a sweet to eat quickly—it was a delicacy to be savored, each spoonful a tribute to a forgotten era of royal kitchens and masterful chefs.
